Cothi Gold Sorbet Is Just Heavenly For St David's Day- Full article
Two Carmarthenshire producers are joining forces to create a special seasonal dessert to celebrate St David’s Day - Cothi Gold Sorbet. The two True Taste award winners, artisan ice cream makers and confectioners, Heavenly, and Ffos y Ffin Brewery, have harnessed their expertise to make a sorbet from the brewery’s latest ale, Cothi Gold. The collaboration was hatched at a recent evening organised by Carmarthenshire County Council for local food and drink producers and restaurateurs at the award-winning Y Polyn restaurant near Nantgaredig. “We were talking over dinner we found we had a lot in common,” said Tracey Kindred who runs the True Taste gold-winning Heavenly and also the adjoining Angel Hotel and Bistro in Llandeilo with her husband Paul. “We already stock Ffosyffin’s beers, which sell well, and at Heavenly we like to be experimental so we thought we’d marry the two together and come up with something for St David’s Day.” Indeed ‘Heavenly’ has a reputation for creating unique and distinctive ice cream which is made in a special ‘lab’ on the premises, where with just 48 hours notice they can create any flavour the customer wants. Preparations are underway for Easter too with a range of themed ice creams including Simnel Cake with Marzipan, Cream Egg, and Welsh cakes. Ffos y Ffin Brewery started in Capel Dewi in 2005, when two beer making friends Glyn Lenton and Steve Smith decided to start producing their beers commercially. Based on a working dairy farm, the micro brewery produces a range of real ales, both bottled and casked, including the golden fruity session bitter Cothi Gold, Paxtons Pride, Towy Ale, Three Arches, Dylans Choice, and Cwrw Caredig. “We met at the dinner and decided this was a good opportunity for local producers to work together,” said Steve Smith. “The evening at Y Polyn was the key and hopefully more local producers will think about collaborating on projects, thanks should go to Barry Davies of Carmarthenshire County Council and Simon Wright at Y Polyn.” Media are invited to attend the sorbet making by appointment.
